  • The use of a vacuum for drying foods that are sensitive to temperature. Using a vacuum of 1 to 70 torr (133 to 9,333 Pa) lowers the temperature for vaporization of the moisture in the food. Applied to concentrating fruit juices, it differs from freeze-drying in that heat is applied to the food material.
