A member of a class of carotenoid pigments. Examples are β‎-carotene and lycopene, which colour carrot roots and ripe tomato fruits respectively. α‎- and β‎-carotene yield vitamin A when they are broken down during animal digestion; β‎-carotene has antioxidant properties.
