An annual, many-branched, thistle-like plant (family Asteraceae) with each branch bearing up to five globular, red, orange, or yellow, composite flower heads. Safflower originated in the region from the Mediterranean to Central Asia, but has been widely cultivated at least since the time of ancient Egypt as a source of red or yellow colouring (it is sometimes known as false saffron), and for the oil pressed from its seeds.
