最重要的低级脂肪族一元羧酸。又称乙酸。分子式CH3COOH。无色、具有刺激性酸味和强腐蚀性的液体，沸点117.87℃，凝固点16.6℃，易溶于水。纯品在低于16.6℃时呈冰状晶体，故称冰醋酸。其蒸气易着火，并能和空气形成爆炸混合物。广泛用作溶剂和有机合成的原料。
