糖化酶
一类通过翻转机制,从淀粉和糖原的非还原端持续性地切下葡萄糖单元,产生β-D-葡萄糖的糖苷水解酶。又称淀粉α-1,4-葡萄糖苷酶(amyloglucosidase)、γ-淀粉酶(γ-amylase)、糖化淀粉酶(saccharogenic amylase)、麦芽糖淀粉酶(maltogenic amylase)。
