鱼糜经加盐擂溃、成型后,于50℃以下缓慢凝胶化一定时间,再于85~90℃环境中加热30~40分钟使其快速通过凝胶裂化温度带,中心温度达80~85℃以上并保持一定时间的加热方法。又称二段加热。在日本,50℃以下缓慢凝胶化被称为“坐”。
